Role Overview

Work alongside culinary leadership to coordinate preparations, food production, staff development, service standards and kitchen operations across island dining venues. Work closely with restaurant, bar, stewarding and purchasing colleagues to meet guest needs during regular meal services and special occasions.

Key Responsibilities

• Support daily production and quality across buffet, à la carte and special-event dining.
• Coordinate kitchen sections, daily mise en place, recipes, portioning and service readiness.
• Monitor hygiene, food-storage temperatures, allergen controls and safe kitchen practices.
• Contribute to menu planning, guest dietary requests and consistent food presentation.
• Help train, coach and organise culinary colleagues during operational shifts.
• Track stock rotation, food waste, ingredient availability and cost-conscious practices.
• Coordinate with food and beverage, stewarding and purchasing teams to maintain smooth service.
• Support kitchen equipment care, shift handovers and responses to operational challenges.

Relevant Skills and Experience

• Previous substantial culinary and supervisory experience, ideally in hotels or resorts.
• Good understanding of food safety, multi-outlet production and international kitchen operations.
• Effective leadership, planning, communication and problem-solving skills.
• Adaptability to a multicultural team and an island resort working environment.
