Key Responsibilities
- Prepare South Indian dishes and accompaniments according to approved recipes and service plans.
- Organise breakfast and meal-period mise en place, ensuring ingredient freshness and station readiness.
- Maintain consistency in flavour, texture, portion size and presentation.
- Monitor food temperatures, allergen handling, safe cooking and appropriate storage.
- Coordinate production and special guest requests with other kitchen sections.
- Guide commis chefs and manage station equipment, cleanliness and stock rotation.
Skills and Experience
- Practical South Indian professional kitchen experience, including regional preparations.
- Knowledge of preparation techniques, condiments and timely breakfast or buffet production.
- Strong section organisation, sanitation and quality-control practices.
- Ability to mentor junior cooks and work calmly during high-volume service.
