Key Responsibilities

• Prepare South Indian dishes and accompaniments according to approved recipes and service plans.
• Organise breakfast and meal-period mise en place, ensuring ingredient freshness and station readiness.
• Maintain consistency in flavour, texture, portion size and presentation.
• Monitor food temperatures, allergen handling, safe cooking and appropriate storage.
• Coordinate production and special guest requests with other kitchen sections.
• Guide commis chefs and manage station equipment, cleanliness and stock rotation.

Skills and Experience

• Practical South Indian professional kitchen experience, including regional preparations.
• Knowledge of preparation techniques, condiments and timely breakfast or buffet production.
• Strong section organisation, sanitation and quality-control practices.
• Ability to mentor junior cooks and work calmly during high-volume service.
