Job Description

• Oversee all dishwashing operations and ensure efficient management of the stewarding department
• Maintain the highest standards of cleanliness and sanitation throughout the kitchen and stewarding areas in compliance with health and safety regulations
• Manage and maintain all kitchen equipment, including dishwashing machines, and arrange timely repairs and servicing
• Implement and monitor food safety and hygiene protocols to ensure compliance with international standards and company policies
• Supervise stewarding staff and provide training on proper cleaning techniques, safety procedures, and operational best practices
• Manage inventory of cleaning supplies, chemicals, and equipment, and coordinate with procurement for timely replenishment
• Ensure proper segregation, storage, and disposal of waste materials in accordance with environmental guidelines
• Conduct regular quality assurance checks to verify cleanliness standards across all kitchen areas
• Coordinate with the kitchen brigade to ensure seamless operations and address any stewarding-related concerns
• Maintain detailed records of equipment maintenance, chemical usage, and staff performance
• Identify opportunities for process improvements and cost optimisation within the stewarding department
• Ensure compliance with all company policies, health and safety legislation, and local regulations

Qualifications

• Minimum 6-7 years of experience in kitchen stewarding, dishwashing operations.
• Proven experience managing stewarding teams and staff supervision
• Strong knowledge of food safety, hygiene protocols, and HACCP principles
• Demonstrated understanding of health and safety legislation and compliance requirements
• Proficiency in inventory management and procurement coordination
• Experience with commercial dishwashing equipment and kitchen machinery maintenance
• Excellent organizational and time management skills
